Peta Baverstock is an award-winning Australian winemaker and the founder of Cuvée-Co Wines, a premium sparkling wine label dedicated to championing cool-climate fruit from the Limestone Coast of South Australia. A specialist in méthode traditionnelle sparkling wine, she honed her craft over almost a decade working alongside acclaimed winemaker Ed Carr and has built a reputation for precision, creativity and elegance in the glass. Baverstock studied oenology at Adelaide University and broadened her experience through winemaking roles in California’s Sonoma Valley, the Yarra Valley and at BRL Hardy. Since launching Cuvée-Co in 2018, she has earned widespread recognition, including multiple Vin de Champagne Award finalist placements, a place in the Top 50 Young Gun of Wine Awards, and wins for Best Young Sparkling Wine of Show at the Australian Sparkling Wine Show in 2021 and 2024. In 2025, her 2021 Cuvée Nessa Blanc de Blancs won Best Sparkling at the Limestone Coast Wine Show, while POPO, Penola’s Old Post Office tasting room, was named Australia’s Favourite Bubbly Place. Through Cuvée-Co, Baverstock continues to elevate Australian sparkling wine with site-driven wines, strong regional identity and a deep commitment to craftsmanship.
